Recipe:
Ingredients:
1/2 a medium sized cucumber
1 medium beetroot, grated
1 cup Greek yoghurt
2 cloves minced garlic
1 tbsp fresh lemon juice
1 tbsp olive oil
sprinkle of salt and pepper
Method:
1. Place a mesh strainer over a bowl, grate cucumber, place in strainer, squeeze out as much water as possible and set aside
2. Grate beetroot, set aside
3. In a separate bowl, combine Greek yoghurt, garlic, olive oil and lemon
4. Stir in cucumber and beetroot
5. Store in an airtight container in the fridge for up to 5 days
