Making this healthy cauliflower soup is easy, quick, and perfect for weeknights or meal prep. Just sauté your aromatics, simmer the cauliflower with your chosen spices and broth, then blend until silky smooth. Ingredients

1 tbsp olive oil
2 cloves garlic
1 tsp chopped, fresh ginger
1 tsp chopped fresh or ground turmeric
1 tsp cumin
1 tsp curry powder
1 brown onion, diced
1 medium head of cauliflower
2 cups of stock or water
Salt and pepper to taste

Method

  1. Heat oil in a pan over medium to high heat. Add onion, cook while stirring until translucent.
  2. Add turmeric, ginger and garlic, stir and heat for 1-2 minutes.
  3. Add ground spices, cumin and curry powder, stir and heat for 1 minute.
  4. Add cauliflower, coat with spices, add salt and pepper, then add stock or water and bring to the boil.
  5. Reduce heat to a simmer and cook for 30-45 minutes or until cauliflower is soft and fork tender.
  6. Remove from the heat ready to blend. If you are using a stainless steel hand mixer or a glass jug to blend, you can blend while the soup is warm. If you are using a plastic jug or plastic hand mixer, allow soup to cool completely before blending.
  7. Heat and serve or cool and place in an airtight container in the fridge for 3-5 days.
